Food World Supermarket is seeking a skilled and passionate
Sous Chef specializing in European cuisine with expertise in Portuguese and Russian dishes

The ideal candidate will support daily kitchen operations in a fast-paced, high-volume retail food environment, ensuring
authentic flavors, consistent quality, and efficient back-of-house operations
. This role is perfect for a chef experienced in preparing both savory and traditional dishes from Portuguese and Russian culinary traditions, while also contributing to broader European menus.
Key Responsibilities
Menu Development & Promotions
Develop and update Portuguese and Russian menu offerings, including traditional and contemporary dishes.
Design promotional packages, combo meals, seasonal specials, and holiday menus.
Standardize recipes, portion sizes, and presentation guidelines for consistency and cost control.
Analyze customer preferences and recommend new items to increase sales and engagement
Food Preparation & Production
Prepare authentic Portuguese dishes such as bacalhau, peri-peri chicken, caldeirada, and pastries like pastéis de nata.
Prepare Russian dishes including borscht, pelmeni, pirozhki, beef stroganoff, and blini.
Maintain consistency in taste, portioning, and presentation.
Prepare sauces, marinades, doughs, and condiments from scratch.
Oversee mise en place and batch cooking for ready-to-eat and grab-and-go counters.
Ensure freshness, quality, and proper display of all food items.
Kitchen Operations
Assist the Head Chef in supervising back-of-house operations.
Monitor inventory levels, control stock rotation, and ensure ingredient freshness.
Maintain food cost control and minimize waste.
Ensure proper storage, labeling, and handling of ingredients.
Uphold cleanliness and compliance with food safety and sanitation regulations.
Team Leadership & Training
Supervise, train, and mentor kitchen staff in Portuguese and Russian culinary techniques.
Coordinate workflow during peak hours.
Support scheduling, delegation, and performance management.
Foster a collaborative, productive, and positive kitchen environment.
Quality & Customer Experience
Ensure food counters are attractive, well-stocked, and visually appealing.
Maintain high standards of taste, consistency, and presentation.
Support the supermarket’s brand by delivering exceptional culinary experiences.
Qualifications & Requirements
Proven experience as a Sous Chef or Senior Cook in European cuisine, preferably with Portuguese and Russian expertise.
Strong knowledge of authentic Portuguese and Russian ingredients, techniques, and traditional dishes.
Experience in high-volume or retail food production preferred.
Knowledge of food safety and sanitation regulations.
Strong leadership, organizational, and communication skills.
Culinary diploma/certification is an advantage.
