Sushi Nine is located at South Fraser Way, Abbotsford, BC V2T 4W1. We are currently looking for a permanent, full-time Head Sushi Chef. Position: Head Sushi Chef Wage: CAD $39.00 per hour Types: Full-time, Permanent (various shifts, including evenings, weekends, and holidays) Working hours: 30-40 hours per week Benefits: 4% vacation pay Job Duties: Plan and direct food preparation and cooking activities for sushi and other Japanese dishes; Develop menus, specialty items, and seasonal features to improve menu diversity and enhance customer satisfaction; Ensure sushi dishes meet high standards of quality, presentation, and consistency; Estimate seafood, rice and other food requirements and assist in controlling food costs; Prepare and cook authentic Japanese dishes, specialty foods, and chefs specials; Oversee the selection, inspection, and proper handling of fish and seafood to ensure freshness and quality; Oversee the preparation of sushi rice and ensure proper texture, temperature and seasoning; Supervise and coordinate the activities of cooks and kitchen staff; Train and mentor junior sushi cooks and kitchen staff in sushi preparation techniques; Lead the recruitment, hiring, and evaluation of kitchen staff; Maintain food safety, sanitation and hygiene standards in accordance with provincial regulations; Arrange for equipment purchases and repairs; May prepare and cook food for special guests, catering orders, or customers with dietary restrictions or allergies. Job Requirements: Completion of secondary school is required; Minimum 5 years of experience in commercial food preparation including two years in a supervisory capacity and experience as a chef, is required; Proficiency in fish filleting, including cleaning, boning, and slicing, is required; A Japanese food cooking certificate is an asset; Skills demonstrations, including taste and plating abilities, may be required.
