About the Position
We are seeking a
Director of Food & Beverage Operations
to lead and oversee all aspects of our Food & Beverage operations. Reporting directly to the General Manager, you will be responsible for the overall performance of all food and beverage outlets as well as culinary operations in a dynamic, fast-paced environment.
This role combines strategic leadership with operational excellence. You will be equally comfortable developing operating budgets and analyzing financial performance as you are being present on the floor to ensure an exceptional guest experience.
Key Responsibilities
Operations Management
Oversee all Food & Beverage outlets, including the restaurant, bar, terrace, theatre, lounge, and room service.
Lead banquet and special event operations.
Oversee kitchen operations and stewarding services.
Ensure seamless coordination between front-of-house, culinary, and support teams.
Develop and manage departmental operating budgets.
Prepare financial forecasts and monitor budget variances.
Optimize team productivity and operational efficiency.
Control food and beverage costs.
Drive the profitability of all Food & Beverage outlets.
Quality & Service Standards
Develop and maintain exceptional service standards.
Ensure consistent delivery of outstanding guest service.
Protect and enhance the property’s reputation.
Ensure compliance with food safety, sanitation, and hygiene standards.
Manage purchasing activities and supplier relationships.
Marketing & Business Development
Lead marketing initiatives and promotional activations for Food & Beverage outlets.
Develop and enhance the overall Food & Beverage offering.
Plan and execute special events and promotional programs.
Leadership & Labour Relations
Lead, coach, and develop a team of four department directors.
Thrive in a unionized environment governed by two collective agreements.
Ensure consistent application of collective agreements while fostering positive labour relations.
Cross-Functional Collaboration
Work closely with the Conference Services team to ensure the successful execution of group events and functions.
Partner with the Sales team to support business development initiatives and deliver exceptional experiences for corporate and event clients.
Collaborate with the Marketing team to position and promote the Food & Beverage offering.
Act as a strategic partner to other hotel departments to ensure a seamless and integrated guest experience.
Qualifications
Degree in Hospitality Management, Restaurant Management, Business Administration, or a related field.
Minimum of 7–10 years of progressive Food & Beverage management experience, including several years in a senior leadership role overseeing multiple outlets.
Proven experience managing a full profit and loss (P&L) operation.
Strong background in budgeting, financial analysis, forecasting, food and beverage cost control, and profitability management.
Experience managing unionized teams governed by multiple collective agreements is considered a significant asset.
Experience overseeing banquets, conferences, and corporate events is a strong asset.
Inspiring leadership style with excellent communication skills and the ability to coach, develop, and motivate management teams.
Thorough knowledge of food safety, sanitation, and hygiene regulations.
Strong guest service orientation with exceptional attention to detail and quality.
Solid understanding of Food & Beverage industry trends and market dynamics.
Bilingualism (French and English) is considered an asset.
Proven ability to manage multiple priorities in a complex, fast-changing environment.
Ability to operate effectively at both the strategic and operational levels, maintaining a strong presence on the floor.
Languages
Bilingualism (French and English), both spoken and written, is required for this position, as we serve an international clientele.
