Food World Supermarket is seeking an experienced and passionate Sous Chef specializing in Indian cookies and traditional snacks, with strong expertise in Indian bakery items, namkeen production, festive sweets, and savory snack preparation. The Sous Chef will support daily kitchen operations, ensure authenticity and consistency in flavors, maintain high food safety standards, and lead kitchen staff in delivering fresh, high-quality ready-to-eat and packaged snack items. Key Responsibilities Menu Development & Promotions Develop and enhance Indian snack and bakery offerings including traditional cookies (nankhatai, jeera biscuits), khari, mathi, namkeen mixes, farsan, chakli, sev, and festive specialties. Design promotional gift packs, family snack combos, festive hampers (Diwali, Eid, weddings), and seasonal specials. Standardize recipes, spice levels, portion sizes, and presentation guidelines for consistency and cost control. Analyze customer preferences and introduce innovative fusion or regional snack varieties to drive sales and engagement. Food Preparation & Production Oversee production of Indian bakery cookies and traditional snacks. Prepare and supervise daily production of namkeen items, savory mixes, fried snacks, and baked goods. Knowledge of authentic regional Indian recipes (Gujarati, Punjabi, South Indian, Rajasthani, etc.) Manage dough preparation, frying techniques, baking temperatures, and batch production schedules. Ensure consistency in taste, texture, crunch, and shelf life. Maintain freshness and quality across all display and packaged snack counters. Monitor oil quality and proper frying procedures to maintain product standards. Kitchen Operations Manage all back-of-house snack production operations. Monitor inventory levels; support ordering and stock rotation (FIFO). Control food costs and minimize waste. Ensure proper storage, labeling, and handling of raw ingredients such as flours, lentils, spices, ghee, and oils. Maintain cleanliness and organization of preparation and packaging areas. Team Leadership & Training Supervise, guide, and train kitchen staff on preparation techniques and standardized recipes. Ensure staff follow hygiene, food safety, and packaging standards. Support scheduling and workflow coordination during peak and festive seasons. Train team members in quality control and batch consistency. Customer Experience Maintain a visible presence at snack and bakery counters. Ensure displays are attractive, properly labeled, and well-stocked. Uphold company image through exceptional product quality, packaging, and presentation standards. Support tasting promotions and in-store sampling initiatives. Qualifications & Requirements Proven experience as a Sous Chef, Senior Baker, or Production Supervisor in Indian snacks, bakery, or sweets. Strong hands-on experience with traditional Indian snack preparation, deep-frying techniques, and commercial baking equipment. Knowledge of authentic regional Indian recipes (Gujarati, Punjabi, South Indian, Rajasthani, etc.). Understanding of food safety and sanitation regulations. Ability to work in a fast-paced supermarket or high-volume production environment. Strong leadership and communication skills. Culinary or baking certification is an asset.
