Sushi California is located at A Street, Surrey, BC V3R 7P6. We are currently looking for a permanent, full-time Head Sushi Chef. If you are interested, please submit your application by e-mail. Position: Head Sushi Chef Wage: CAD $39.00/hour Types: Full-time, Permanent (various shifts including evenings, weekends, and holidays) Working hours: 30-40 hours/week Benefits: 4% vacation pay Job Duties: Plan and direct the preparation and cooking of sushi and other Japanese dishes; Supervise and coordinate the activities of kitchen staff; Plan menus and create special recipes; Ensure sushi dishes meet high standards of quality, presentation, and consistency; Estimate seafood, rice and other food requirements and assist in controlling food costs; Oversee the selection, inspection and proper handling of fish and seafood to ensure freshness and quality; Oversee the preparation of sushi rice and ensure proper texture, temperature and seasoning; Train and mentor junior sushi cooks and kitchen staff in sushi preparation techniques; Maintain food safety, sanitation and hygiene standards in accordance with provincial regulations; Prepare and present sushi and Japanese dishes, specialty dishes, chefs specials, and customized dishes for customers with food allergies or special dietary requirements.
